Mint Oreo Ice Cream

We are still screaming for ice cream over here. Our last post was about the most delicious lemon pudding ice cream. Well, now we want to share a new flavor which may actually rival the most delicious lemon. It's true, this mint Oreo ice cream is incredibly good. We used the same base for the ice cream (recipe in previous post) but subbed in vanilla pudding instead of lemon and added the following:

2 teaspoons peppermint extract
6-8 drops of green food coloring


After mixing/freezing the ice cream, stir in:

2 cups chopped Oreos - about 2 rows of the tray, depending on how many Oreos you eat before you crush them! ;)

On a side note: let it be known that there is a HUGE difference between "mint extract" and "peppermint extract". Mint=toothpaste flavor, peppermint=candy canes. You want peppermint!

Now the trick with the Oreos is to crush them in a gallon size plastic bag using a rolling pin. Then stick the bag in the freezer until you are ready to use them. Also note that you do not want to add the Oreos to the ice cream until after it is frozen. This brings back memories of the first time I tried to make mint Oreo ice cream. Mistake #1, I used mint extract. Mistake #2, I put the cookies in at the beginning. The result was cement-colored, toothpaste-tasting stuff. I don't even think I would call it ice cream. Anyways, lesson learned and now we have a really good Mint Oreo ice cream!!
