
I love making ice cream during the summer and really love when I have a chance to try a new recipe or experiment with new flavors. The following is the result of one of those ice cream experiments and it is SO good! Tim and I concocted this recipe last summer in an effort to make something like Nelson's frozen lemon custard. I credit Tim with the brilliance behind this recipe which starts with a modified version of Ben & Jerry's vanilla ice cream base + this secret ingredient:

The pudding makes the texture of the ice cream so creamy and smooth just like frozen custard and the lemon flavor is absolutely amazing (and pretty darn close to the flavor of Nelson's!).
Lemon Pudding Ice Cream
2 eggs
3/4 cup sugar
2 cups whipping cream
1 1/2 cups half & half or 2% milk
1 (3 oz.) box Instant Lemon Pudding
Whisk the eggs in a bowl until light and fluffy. Whisk in sugar a little at a time until completely added and then whisk for a full minute. Pour in whipping cream and half & half and mix. Stir in pudding. Pour mixture into ice cream freezer canister and freeze according to the manufacturer's directions.
It is the consistency of soft serve/frozen custard when it is first done and we prefer to serve it that way. You can always freeze it solid after mixing it and it is still really good that way too.
We have also subbed chocolate pudding and it is delicious; would be great as rocky road. Banana is not recommended unless you like banana laffy taffy, a lot! I would love to try cheesecake pudding with strawberries or vanilla pudding with peaches. You could even make pistachio or butterscotch!

The lemon is our favorite and it is really delicious, we promise!! :)
